Packed with flavour, this red lentil dhal only requires a few ingredients and is simple to create, but the whole family will love its warming ways…

Vegan red lentil dhal

  • 200g split red lentils
  • 20g grated ginger
  • 2 fresh garlic cloves, crushed, chopped or grated
  • 4 Tbsp sunflower oil
  • 1 Tbsp Madras curry powder
  • 100g creamed coconut
  • 40g chopped fresh coriander
  • 2 tsp salt


  1. Sauté the garlic and ginger in the oil.
  2. Add and fry the Madras curry powder.
  3. Now add the lentils and fry them briefly.
  4. Reduce the heat and add 1 litre water and the coconut.
  5. Continue cooking on a low heat until the lentils dissolve.
  6. Remove from the heat, then add the salt and coriander.
  7. As good cold on toast as it is hot over rice.
