Vegan Zoodles with Avocado, Basil & Mint Recipe
Zoodles make the perfect pasta replacement for when you fancy a light lunch, but don’t fancy spending the afternoon sleeping off a food coma!

All you need to whip up these zoodles is simply a blender and a spiralizer which keeps it nice and simple!

- 1 1 large zucchini / courgette spiralized
- For the dressing:
- 1 1 medium ripe avocado
- 1 1 cup basil
- 3 3 sprigs fresh mint
- 2 2 Tbsp extra virgin olive oil
- 1 1 Tbsp fresh lemon juice
- salt and pepper to taste
Method
- In a blender container, add the skinned and chopped avo, basil and mint, and using one or two short bursts of the blender, very quickly chunky blend the mixture.
- Stir in the remaining ingredients and taste test, adding more flavour if needed.
- Top the zoodles with the dressing before serving
- Add other salad ingredients like cheese, cherry tomato, pomegranate rubies, nuts, egg, bacon (pretty much whatever is in the fridge or grabs your fancy)
Notes
- Due to the avocado turning brown, make sure this is served freshly dressed and prepared.
- The quantities specified are for one whole portion or two sides.
