  • 108.33333333333 108.33333333333 g plain flour
  • 0.66666666666667 0.66666666666667 Tbsp soya flour
  • Pinch ground turmeric
  • 0.083333333333333 0.083333333333333 tsp salt
  • 133.33333333333 133.33333333333 ml soya milk
  • 0.66666666666667 0.66666666666667 Tbsp sunflower or rapeseed oil
  • 0.66666666666667 0.66666666666667 oranges
  • 25 25 ml agave syrup
  • Juice of half a lemon
  • Additional oil for frying

Method

  1. Whisk together the flours, turmeric, salt and soy milk until a smooth batter is formed. Stir in the oil.
  2. Use the mixture to prepare thin crepes in a hot lightly oiled frying pan. Keep them warm in a low oven.
  3. Peel the oranges, segments and remove the membrane before cutting into chunks.
  4. In a small pan, bring the agave syrup and lemon juice to the boil. Remove from heat and add the orange chunks.
  5. To serve: place a crepe on a plate, add a couple of spoonfuls of the orange sauce in the middle and fold the crepe over. Serve warm.

Tip

The batter and the orange sauce can be prepared the evening before and then re-heated before serving.
