In this vegan Welsh rarebit recipe, we have used smoked cheese for an added depth of flavour, but you can use any plant-based cheese you like – as long as it melts well!

What is the difference between Welsh rarebit and cheese on toast?

Welsh rarebit is made with a cheese-based sauce that is slathered on toasted bread and grilled until it’s bubbly and oozing. Cheese on toast is a simpler alternative which is toasted bread topped with slices of cheese and then grilled.

The cheese sauce for Welsh rarebit is usually made from cheese, flour, butter, and in this recipe, Guinness which gives it a deeper, richer flavour.

Do you put eggs in Welsh rarebit?

The traditional recipe for Welsh rarebit included eggs. But this vegan Welsh rarebit recipe is egg-free and still equally delicious.

  • 30 30 g dairy-free butter
  • 80 80 g Guiness
  • 2 2 tsp English mustard
  • 30 30 g plain flour
  • 120 120 ml soya milk
  • 2 2 tsp vegan Worcestershire sauce
  • 180 180 g vegan smoked cheese

Method

  1. Add the butter and flour into a saucepan over medium heat and cook for 3-4 minutes to make a roux.
  2. Slowly add the Guinness and soya milk whilst mixing and cook for 4-5 minutes until a smooth thick sauce is formed.
  3. Next, add the mustard, vegan Worcestershire sauce and cheese, and whisk until smooth.
  4. Season to taste.
  5. Toast one side of the bread under the grill, then spread some of the mixture onto the untoasted side and place back under the grill for 3-4 minutes until the sauce has coloured and set.

Each 101g serving contains:

11g Fat, 6.6g Saturates, 24g Carbohydrate, 2.2g Sugars, 1g Fibre, 3.3g Protein, 1.2g Salt.
