Peanut Satay Stir-Fry

This savoury vegan peanut satay stir-fry with marinated tempeh pieces makes for an unbelievably tasty dinner. Simply make the sauce and fry the tempeh with your choice of stir-fry veg for a quick and easy meal that will be on your table in under 15 minutes.

  • For the sauce
  • 0.25 0.25 tsp chilli flakes or 1 whole fresh chilli, chopped
  • 1 1 Tbsp sesame oil
  • 1.5 1.5 Tbsp tamari or soy sauce
  • 1.5 1.5 Tbsp peanut butter
  • 2 2 Tbsp maple syrup or agave
  • 30 30 ml water
  • For the stir-fry
  • 100 100 g Tiba Tempeh Soy-Marinated Pieces
  • Stir-fry veggies
  • Udon or rice noodles
  • Handful of peanuts (optional)

Method

  1. Combine all the sauce ingredients in a large bowl and set aside.
  2. Heat 1 tbsp oil in a wok or pan, then add the Tiba Tempeh Soy Pieces and the stir-fry veggies. Cook for 2-3 minutes.
  3. Add the sauce to the cooked tempeh and veggies. Cook for another 2 minutes.
  4. Cook the noodles in a separate pan as per pack instructions.
  5. Arrange in a bowl and serve with a sprinkle of toasted crushed peanuts, if using
