Oreo Brownies

This deliciously fudgy vegan Oreo brownie recipe comes with added protein thanks to the addition of chickpeas and is entirely plant-based. If you fancy adding a bit of extra crunch to your plant-based brownies, decorate the top with Lotus and Oreo biscuits for a properly tasty, crowd-pleasing treat. You can even swap out the flour and skip the biscuits to make this recipe gluten-free.

  • 0.083333333333333 0.083333333333333 tin of chickpeas (peas and water – use it all!)
  • 8.3333333333333 8.3333333333333 g margarine (room temperature)
  • 8.3333333333333 8.3333333333333 g soft brown sugar
  • 4.1666666666667 4.1666666666667 g caster sugar
  • 0.041666666666667 0.041666666666667 tsp baking powder
  • 2.5 2.5 g cocoa powder
  • 0.083333333333333 0.083333333333333 tsp vanilla extract
  • 6.25 6.25 g plain flour (or gluten free plain flour)
  • 0.83333333333333 0.83333333333333 g melted dark chocolate
  • 0.083333333333333 0.083333333333333 pack veggie/vegan biscuits (crushed)

Method

  1. Pre-heat the oven to 160 degrees C fan
  2. Line an 8 inch square tin with baking paper
  3. Blitz the chickpeas (and the water they came in) in a food processor until smooth (you can do this by hand but it will take a lot more effort!)
  4. Add the margarine and sugar and beat together
  5. Cocoa, flour and baking powder, mix well
  6. Fold in the chocolates or biscuit pieces, leaving about 1/3 to sprinkle on
  7. Pour the mix into the lined tin and add the remaining biscuits/chocolates (or if using a spread add a tsp so it’ll end up approx. in the middle of each slice when cut),
  8. bake for 25 minutes
  9. Leave to cool completely in the tin before slicing
  10. Alternative option – double the mixture ingredients, use a rectangular cake tin/roasting tin and make half and half with two flavours!
