Vegan Avocado Mint Choc Chip Ice Cream
Avocado makes a wonderfully creamy base for this refreshingly vibrant vegan mint choc chip ice cream.
- 2 ripe avocados
- 2 tbsp agave nectar
- 1/4 cup Vita Coco Coconut Milk
- 1 pinch peppermint extract
- 1 handful cacao nibs
- Blend the avocadoes, coconut milk, peppermint extract and agave in a high-speed blender until smooth
- Pour into a freezer-safe dish and stir through the cacao nibs
- Freeze for 2-3 hours and enjoy.
