Vegan Avocado Mint Choc Chip Ice-Cream

Avocado makes a wonderfully creamy base for this refreshingly vibrant vegan mint choc chip ice-cream.

  • 2 ripe avocados
  • 2 tbsp agave nectar
  • 1/4 cup Vita Coco Coconut Milk
  • 1 pinch peppermint extract
  • 1 handful cacao nibs
  1. Blend the avocadoes, coconut milk, peppermint extract and agave in a high-speed blender until smooth
  2. Pour into a freezer-safe dish and stir through the cacao nibs
  3. Freeze for 2-3 hours and enjoy.
