Vegan Jerk Seitan Skewers

Create your own succulent vegan jerk seitan skewers with this tasty recipe. Seitan is a popular meat substitute because it has a similar texture to meat and is high in protein.

Whether it’s warm outside or not, these vegan jerk seitan skewers will give you a taste of sunny Jamaica. Throw them on the BBQ or place them under the grill and serve with rice for a delicious midweek meal.

What is seitan?

Seitan is a high protein meat replacement that was invented by Buddhist monks in China around 1,500 years ago.

It’s made by mixing vital wheat gluten flour with water and seasoning to create a dough which is steamed and then cooled to create sliceable vegan meat.

Depending on what spices and seasonings are added, you can easily create different vegan meats including ‘chicken’, ‘beef’ and ‘duck’.

Seitan is also available to buy pre-made at specialist shops and online.

What is jerk seasoning made of?

This recipe uses gently spiced, classic Jamaican seasoning which is delicious when balanced with the lime yoghurt.

Jerk seasoning traditionally includes:

• Chilli powder or cayenne pepper

• Allspice

• Garlic powder

• Onion powder

• Thyme

• Paprika

• Cinnamon

You can buy ready-made jerk seasoning at most supermarkets, or make your own.

Tip: Double the seitan ingredients and keep a batch in the fridge for different meals throughout the week. You could try stuffed pitta breads with jerk kebab meat, jerk seitan with coconut rice and peas or a Jamaican stew.

  • For the seitan
  • 37.5 37.5 g vital wheat gluten
  • 0.5 0.5 tbsp gram flour
  • 0.5 0.5 tsp onion powder
  • 0.5 0.5 tsp garlic powder
  • 0.25 0.25 tsp dried thyme
  • 0.25 0.25 tsp all purpose seasoning
  • 40 40 ml water
  • 0.5 0.5 tbsp soy sauce
  • 0.25 0.25 tbsp vegetable oil
  • For the jerk marinade
  • 0.25 0.25 tbsp jerk seasoning
  • 0.25 0.25 tbsp coconut treacle or maple syrup
  • 0.25 0.25 tbsp soy sauce
  • 0.25 0.25 tbsp vegetable oil
  • For the skewers
  • 0.25 0.25 red pepper, chopped
  • 0.25 0.25 green pepper, chopped
  • 0.25 0.25 yellow pepper, chopped
  • For the lime yoghurt
  • 1 1 tbsp dairy-free yoghurt
  • 0.5 0.5 limes, zest and juice
  • 0.25 0.25 tbsp maple syrup
  • For the poaching
  • 2.4 litres vegetable stock


  1. Firstly, put the vital wheat gluten, gram flour, onion powder, garlic powder and thyme into a bowl and pour in the water, soy sauce and vegetable oil. Mix this together to form a dough, then knead for 5-6 minutes until it becomes stretchy. Split into 16 pieces.
  2. Bring the stock to a gentle simmer in a large saucepan, then add the seitan and simmer for 45 minutes. Remove the pan from the heat and leave the seitan to cool in the stock.
  3. Add all the marinade ingredients into a bowl and mix well. Add the seitan to the bowl and leave to marinate for 30 minutes. Put four pieces of seitan and five pieces of pepper on each skewer then cook on the BBQ or under the grill for 3-4 minutes on each side.
  4. To make the lime yoghurt, mix all the ingredients together.
  5. Get ready to dip and enjoy your jerk seitan skewers!
