Vegan & gluten-free waffles

If you are into a light and fluffy breakfast or afternoon treat, then you will love these vegan and gluten-free waffles!

  • 200 g rice flour
  • 50 g coconut flour
  • 30 g cane sugar
  • 1 pinch of salt
  • 400 g coconut cream (1 full fat can)
  • 50 g coconut oil (melted)
  1. Preheat your waffle maker.
  2. In a large bowl, stir together the rice flour, coconut flour, cane sugar and salt.
  3. Next add the coconut cream and coconut oil and keep stirring until smooth. It should make a thick and smooth batter.
  4. Spoon the batter into a ladle and pour onto your hot waffle maker, spreading it all over before closing it and letting cook for 3 to 4 minutes.
  5. Repeat until there is no batter left.
