  • 0.16666666666667 0.16666666666667 tsp ground cinnamon
  • 0.25 0.25 tsp baking powder
  • 25 25 g caster sugar
  • Zest of 2 oranges
  • Juice of one orange
  • 0.16666666666667 0.16666666666667 tsp vanilla extract
  • 0.33333333333333 0.33333333333333 tsp orange extract
  • 45 45 ml Nush plain yoghurt/ dairy-free yoghurt of your choice
  • 29.166666666667 29.166666666667 ml dairy free milk
  • For the frosting:
  • 16.666666666667 16.666666666667 g icing sugar
  • 0.33333333333333 0.33333333333333 tubs Nush plain cream cheese/ 300g vegan cream cheese
  • 0.16666666666667 0.16666666666667 Tbsp corn flour
  • 0.083333333333333 0.083333333333333 tsp orange extract
  • To decorate:
  • Mini gingerbread men
  • Flaked almonds

Method

  1. Preheat oven to 180c and grease or line a loaf tin.
  2. In a bowl combine the flour, ground almonds, baking powder, cinnamon and sugar.
  3. Next in a separate bowl, combine the zest and juice from the clementine’s/oranges, vanilla and orange extract, yoghurt and milk.
  4. Combine the two until mixed well and then pour the mixture into the loaf tin.
  5. Bake in the middle of the oven for 45-50 minutes until a toothpick comes out clean.
  6. Whilst the loaf is cooking use an electric or hand whisk to combine the icing sugar, cream cheese, corn flour and orange extract. Place the bowl immediately in the fridge to cool and harden.
  7. Once the loaf is cooked allow it to cool completely before removing from the tin.
  8. Cover with the cream cheese frosting and decorate with mini gingerbread men, flaked almonds and a dusting of cinnamon should you wish. Slice and enjoy!
