Foie gras production is illegal in the UK on animal cruelty grounds, as the ducks or geese whose livers are harvested to make it are fattened up by force-feeding with a tube, a process known as gavage.

After sustained pressure from Viva!, Amazon stopped selling it as have many restaurants and now the government are considering banning the sale and import of it in the UK.

In fact, the UK government is now even consulting with chefs to learn how to make a vegan foie gras alternative ahead of the ban.

Luckily, it’s easy to recreate the taste and texture of foie gras using vegan ingredients.

To make this vegan faux gras recipe, you’ll need is tofu, almonds and cashews to form the base. Soaking your cashews before is essential to ensure they blend to create a silky smooth texture.

Parika and liquid smoke add a subtle smokey flavour with cognac adding the final touch of luxury. Finally, the vegan faux gras is finished off with a layer of butter, just like the original. It’s rich, smooth and utterly moreish spread thickly on crusty bread.

  • 50 50 g smoked tofu
  • 25 25 g cashew pieces, soaked in water for a few hours
  • 0.75 0.75 Tbsp rapeseed oil
  • 0.25 0.25 Tbsp ground almonds
  • Juice from 1 lemon
  • 0.125 0.125 tsp smoked paprika
  • A few drops of liquid smoke (optional)
  • 0.5 0.5 tsp cognac (use brandy if you don’t have cognac)
  • Lots of freshly ground black pepper
  • 0.125 0.125 tsp salt
  • 0.375 0.375 Tbsp vegan butter
  • 0.125 0.125 tsp turmeric

Method

  1. Blend everything except the butter and turmeric together until smooth.
  2. Spoon into small pots and smooth the top down.
  3. Melt the butter in a pan then stir in the turmeric until it has dissolved.
  4. Pour a little of the melted butter onto the top of the pâté in each pot then chill in the fridge for at least one hour before serving.
  5. Serve with warm toast.
