Lumaconi with Lentils Ragout

This lentil ragout is a hearty and healthy pasta dish made from authentic Italian ingredients that will leave even the hungriest eaters satisfied.

Vegan lumaconi with lentils ragout

  • 700 g CIRIO Passata Rustica
  • 400 g CIRIO Lenticchie – Lentils
  • 320 g whole wheat pasta
  • 1 carrot
  • ¼ onion
  • 1 stalk of celery
  • ½ leek
  • 2 cups of water at room temperature
  • 5 tablespoons extra virgin oil
  • Salt to taste
  1. Heat the oil in a frying pan then add the diced celery, carrot and leek.
  2. Next add salt to taste, the Cirio Lenticchie, and cook for a few minutes.
  3. In a saucepan, heat the oil then add the finely chopped onion, followed by the Cirio Passata Rustica and salt and simmer everything for about 1 hour.
  4. Cook the lentils, add them to the sauce and allow to simmer for a few more minutes.
  5. Cook the pasta (per the packet instructions), drain, then stir in your ragout sauce.

Your dish is ready to be served!
