The combination of smoked tofu from The Tofoo Co. combined with warming spices makes this super simple smoked tofu scramble shakshuka a real taste sensation!

  • 0.5 0.5 pack Smoked Tofoo
  • 0.5 0.5 Tbsp olive oil
  • 0.5 0.5 red onion
  • 1.5 1.5 cloves of garlic
  • 0.5 0.5 tsp ground cumin
  • 0.5 0.5 tsp smoked paprika
  • 1 1 Tbsp harissa paste
  • 0.5 0.5 400g tin chopped tomatoes
  • 75 75 g baby spinach
  • To serve
  • Warm flatbreads

Method

  1. Heat a frying pan and add the olive oil.
  2. Finely chop the red onion and garlic and add to the pan, frying until softened.
  3. Add the cumin, paprika and harissa paste and fry for about 1 min until fragrant.
  4. Add the tinned tomatoes and cook for about 3 mins stirring well.
  5. Take the Smoked Tofoo and using your hands crumble it into a bowl until it resembles scrambled egg.
  6. Add to the pan and cook for a further 5 mins until warmed through.
  7. Add the spinach and cook until wilted.
  8. Serve with warmed flatbreads.
