Just when you thought this classic dessert couldn’t get any more delicious, this vegan crème brûlée comes along!

With a super-rich and creamy coconut milk custard topped with caramelised maple syrup, it’s the ultimate decadent vegan dessert.

Few things in life are more satisfying than cracking through the crisp, sugar layer on top of a silky crème brûlée.

This recipe uses maple syrup to create the signature topping, but you’ll need a kitchen torch to create that classic crisp layer.

Alternatively, you could sprinkle a little caster sugar on top and pop it under the grill for a minute until the sugar starts to caramelise.

To create the thick custard layer, cashews are blended with full-fat coconut cream and sweetened with maple syrup.

  • 100 100 ml coconut milk
  • 0.25 0.25 Tbsp cornflour
  • 5 5 g maple sugar
  • 5 5 g pure Canadian maple syrup
  • 5 5 g raw cashew nuts
  • 0.25 0.25 tsp yeast flakes
  • 0.25 0.25 tsp vanilla extract
  • 0.25 0.25 small pinch turmeric
  • 1 1 Tbsp pure Canadian maple syrup for topping

Method

  1. Combine the coconut milk, corn flour, maple sugar, maple syrup and cashew nuts in a saucepan and stir.
  2. Bring to a simmer over medium heat while stirring (about 3-5 minutes).
  3. Remove from heat (don’t worry about lumps if they occur).
  4. Add the cream mixture to a high-speed blender. Add the nutritional yeast flakes, vanilla, and pinch of turmeric (for colour). Blend until creamy.
  5. Pour the cream into 4 ramekins (or 8 smaller containers).
  6. Place in the fridge to set for at least 4 hours to overnight.
  7. Before serving, sprinkle the top of each with approximately 1 tablespoon of maple syrup and make sure the entire surface of cream has maple syrup over it.
  8. Use a kitchen torch to caramelise the maple syrup and create a crispy top coating.
  9. Refrigerate for up to an hour before serving.
