Easy Cinnamon Rolls

Warm cinnamon rolls are one of those bakes that are a delicious treat at any time of day! These soft and fluffy rolls are filled with a temptingly nutty filling and topped with sweet vegan icing are a classic bake that never fails to please.

- 75 75 ml Alpro Almond Unsweetened Drink
- 125 125 g spelt flour
- 0.25 0.25 sachet yeast (7g)
- 0.25 0.25 Tbsp sugar
- 1.75 1.75 Tbsp apple sauce
- 0.25 0.25 tsp baking powder
- 0.25 0.25 tsp ground cinnamon
- a pinch of salt
- For the filling
- 37.5 37.5 g apple sauce
- 0.25 0.25 Tbsp cinnamon
- 0.5 0.5 Tbsp maple syrup
- 18.75 18.75 g chopped nuts (hazelnuts, almonds, pecans...)
- For the topping
- Alpro Plain Unsweetened plant-based alternative to yoghurt
- 0.25 0.25 Tbsp icing sugar

Preheat the oven to 220°C/Gas Mark 7.

Sift the flour, baking powder and salt into a large bowl.

Heat the Alpro Almond Unsweetened Drink slowly in a pan, then dissolve the yeast in it and let it rest for 5 minutes. Add the Alpro Almond Unsweetened Drink, apple sauce, sugar, baking powder and salt to the flour, then stir slowly with a wooden spoon until it becomes a sticky dough. Sprinkle some flour on a work surface and knead the mixture into a ball. Cover and leave to rise in a floured bowl for 20-30 minutes.

For the filling, chop the nuts finely and mix with the apple sauce, cinnamon and maple syrup. Sprinkle the work surface with flour again then, with a rolling pin, roll the dough to about 5mm (1⁄4in) thick.

Brush the dough with the filling. Roll up and cut into segments of 3cm (11⁄4in). Put these rolls in a greased baking dish; ideally where they fit perfectly against each other and the edge of the dish, as they may unroll if not. Bake for 20-25 minutes.

Meanwhile, make the topping. Mix the Alpro Plain Unsweetened with the icing sugar, then drizzle over the baked cinnamon rolls. Yum!
TIP: If you don’t have any apple sauce, a mashed ripe banana will work too!
