Vegan Tofu ‘Egg’ Nog Recipe

Eggnog is the essence of Christmas captured in a single glass. The only problem is that the traditional recipe is a cupful of calories and animal products, so this vegan eggnog with tofu makes a brilliant guilt-free alternative.

Serve the vegan eggnog hot or chilled and leave the rum out for the kids!

  • 175 175 g silken tofu
  • 192.5 192.5 ml soy milk
  • 0.5 0.5 Tbsp vanilla extract
  • 14 14 g sugar
  • 1 1 Tbsp soft brown sugar
  • 0.125 0.125 tsp ground turmeric
  • 0.125 0.125 tsp ground cinnamon
  • Pinch of freshly grated nutmeg
  • 70 70 ml rum

Method

  1. Combine all ingredients (apart from nutmeg and rum) in a food processor until well combined and then chill.
  2. When ready to drink add rum and mix thoroughly, pour into glasses and sprinkle nutmeg over each glass.
