Chocolate Orange Cake

- For the cake:
- 30 30 g self-raising flour
- 15.625 15.625 g caster sugar
- 0.1875 0.1875 tsp bicarbonate powder
- 3.125 3.125 g cocoa powder
- 6.25 6.25 g ground almonds
- 16.25 16.25 g vegan margarine (gently melted)
- 0.0625 0.0625 tsp almond essence
- 0.0625 0.0625 tsp vanilla essence
- 25 25 ml soya milk
- 15.625 15.625 g vegan natural yoghurt
- Zest of 1 orange
- For the filling:
- 3.75 3.75 g cocoa powder
- 12.5 12.5 g icing sugar
- 6.25 6.25 g soya cream
- 0.0625 0.0625 tsp almond essence
- 0.0625 0.0625 tsp vanilla essence
- For the topping:
- 18.75 18.75 g dark chocolate
- Zest of 1 orange
Method
To make the cake:
- Sift the flour into a large bowl and add all of the remaining dry ingredients. Set to one side.
- In a large mixing bowl, add all of the wet ingredients and combine.
- Fold in all the dry ingredients into the wet ingredients.
- Divide the mixture into three lined cake tins and place into a preheated oven (180°C) for 15 minutes. After this time your cake should have risen. To check it is cooked, carefully slide a skewer into the middle of the cake. If it comes out clean it is done.
- While the cake is baking make the filling.
To make the filling:
Simply combine all of the ingredients until smooth then place in the fridge. When chilled, your mixture should have a thick consistency. If too thin, add a little extra cocoa powder.
To make the topping:
- Break the chocolate into a bowl and add the orange zest. Balance the bowl over a pan with a little water in it. Gently heat until the chocolate starts to melt. Once melted turn the heat off but leave over the pan. This will allow the chocolate to stay melted for longer until ready for use.
Bringing it all together:
- When the cake is completely cooled, set the base layer onto your serving plate. Carefully spread half of the filling onto the top and add the second sponge. Repeat with the remaining filling and add the final sponge.
- Spoon the melted chocolate over the top and serve straight away while the chocolate is still warm.
