Vegan cheesy garlic mashed potatoes

Creamy, ‘cheesy’, garlic mashed potatoes – so good they’ll steal the limelight from the main dish!

Mashed potatoes are the ultimate comfort food – and it’s even better when they’re infused with the rich, savoury flavours of ‘cheese’.

These creamy mashed potatoes don’t use any cheese at all, as the flavour comes from the addition of nutritional yeast, which is not just a fantastic flavour-enhancer, but a nutritional powerhouse too!

Ingredients

(Servings: 4)

  • 150 150 g baking potatoes, peeled and diced
  • 20 20 ml Oatly oat cream
  • 0.75 0.75 tbsp vegan buttery spread
  • 1 1 tbsp nutritional yeast flakes
  • 0.5 0.5 cloves of garlic, peeled and crushed
  • 0.125 0.125 tsp salt
  • freshly ground black pepper to taste

Method

  1. Cover the potatoes with water in a large pan. Place the pan over a medium-high heat, bring to a boil, then cook for about 15 minutes until soft.
  2. While the potatoes cook, add the oat cream, dairy-free spread, yeast flakes, garlic, salt and pepper to a large mixing bowl and set aside.
  3. When the potatoes have cooked, remove them from the heat and drain. A spoonful at a time, press the potatoes  through a ricer (or use a masher) into the mixing bowl. Stir all the ingredients together until completely smooth.
  4. Scoop the finished mashed potato mixture into a bowl, or onto plates to serve.
