  • 41.666666666667 41.666666666667 g all purpose flour
  • 12.5 12.5 g sugar, or any sweetener of your choice
  • 10 10 ml soy milk, or any plant milk of your choice
  • 5 5 ml coconut oil, or any other oil of your choice
  • 0.33333333333333 0.33333333333333 extra ripe bananas
  • 0.083333333333333 0.083333333333333 tsp baking soda
  • 0.083333333333333 0.083333333333333 tsp vanilla extract
  • pinch sea salt

Method

  1. Preheat your oven to 180 °C degrees (360° F).
  2. In a large bowl, mix flour, baking powder and salt together.
  3. In a separate bowl, ad banana, sugar, vanilla extract, oil and soy milk and mash together with a fork.
  4. In the bowl with liquids, add the dry mix and stir with a wooden spoon until evenly incorporated (do not over-mix).
  5. Pour into a baking form (we use a 31x13cm / 12x5in ) with a sheet of baking paper inside.
  6. Optional: you can add some banana slices on top of the bread. In this case sprinkle the banana slices with sugar to facilitate caramelisation in the oven.
  7. Bake for 50 mins at 180 °C or 360˚F. Let cool down before serving.
