Avocado Bean Burger
If you are obsessed with burgers and avocados then this vegan bean burger recipe with smashed avocado and gherkin sauce is for you! As the weather gets warmer, you can also cook this recipe on the BBQ as the veggie patties hold their shape well when cooked.
- For the burger:
- 1 1 sesame seeded burger buns
- Baby gem lettuce leaves
- 1.5 1.5 tomatoes
- For the patties:
- 0.5 0.5 red onion, finely diced
- 1.5 1.5 cloves garlic, minced
- 100 100 g butter beans
- 1 1 Tbsp fajita seasoning
- 1 1 Tbsp olive oil
- Large pinch salt & pepper
- 0.5 0.5 slice stale bread (or around ½ cup breadcrumbs)
- 0.25 0.25 lime, squeezed
- For the avocado:
- 3.5 3.5 avocado smashed
- 0.25 0.25 lime
- 0.25 0.25 tsp chilli flakes
- sea salt & pepper
- For the gherkin sauce:
- 1.5 1.5 Tbsp Follow Your Heart Avocado Oil Vegenaise
- 0.5 0.5 small gherkin
- 0.25 0.25 tsp onion powder
- Finely dice the onion, add to a frying pan with a drizzle of olive oil and fry for 3 minutes, then add the minced garlic and fry for a further 1 minute.
- Add the butter beans, fajita seasoning, salt & pepper and squeeze of lime then fry for around 5 minutes.
- Add to a food processor along with the olive oil and breadcrumbs / stale bread and blitz for around 30 seconds until combined.
- Check the consistency, it should hold together when pressed into patties *Note if it doesn’t, try blitzing for a little longer until the butter beans have broken down.
- Either fry in a pan with a drizzle of olive oil for around 6 minutes on each side OR oven bake with a drizzle of olive oil for 25 minutes at 180ºC.
- Avocado Layer: Simply mash all of the ingredients together and squeeze the other ½ lime and set aside.
- Gherkin Layer: Give the food processor a quick rinse then add the Follow Your Heart Avocado Oil Vegenaise along with the gherkin and onion powder and blitz until smooth. This should give a tangy flavour to the dip.
- Layer up the burger with lettuce and tomatoes and enjoy!
