Sugar-free vegan orange cake

Ingredients

For the dry ingredients:

  • 160g rice flour
  • 80g cornflour
  • 60g ground almonds
  • 1 tsp baking powder 
  • ½ tsp xantham gum
  • ½ tsp salt

For the wet ingredients:

  • 1 tbsp. flaxseeds (ground)
  • The juice of 3 oranges + 1 tsp zest
  • 100g coconut cream
  • 1 banana (ripe)

Method

  1. Place the oven rack in the middle of the oven and preheat to 180°C. Grease your pan. Cover the ground flaxseeds with 3 tbsp. of water and leave on the side for 10 minutes.

  2. Cut 5 thin slices of oranges and position at the bottom of your pan.

  3. In a large bowl, stir together all the dry ingredients.

  4. Next (in a different bowl) place all the wet ingredients and combine thoroughly.

  5. Pour the wet ingredients into the dry ingredients and whisk until no lumps remain.

  6. Pour the batter into your pan over the sliced oranges and place in the oven for 40 minutes, or until golden brown. Enjoy with delicious coconut whipped cream on top if desired.
