Vegan Strawberry & Chocolate Buttercream Tart Recipe

  • For the crust:
  • 1 1 cup almonds
  • 1 1 cup dates
  • For the chocolate buttercream:
  • 1 1 cup dates
  • 175 175 ml water
  • 1 1 lemon, juiced
  • 25 25 g cacao powder
  • 2 2 Tbsp cashew butter
  • 2 2 Tbsp coconut oil
  • 2 2 Tbsp maple syrup
  • 1 1 tsp vanilla extract
  • pinch salt
  • For the toppings:
  • sliced strawberries
  • mint leaves

Method

To make the crust:

  1. Pulse the almonds into flour in a food processor.
  2. Add the dates and process until they stick together.
  3. Press into the bottom and up the side of a lined spring form pan or tart moulds.

To make the buttercream:

  1. Blend all the ingredients until smooth.
  2. Refrigerate overnight so it can develop those magical flavours, then spread evenly into your crust.
  3. Top off with strawberries and mint.
