Simple Vegan Creamed Spinach

This delicious vegan creamed spinach is the perfect dip for parties or even as a side dish for a roast dinner, the possibilities are endless!

  • 112.5 112.5 g silken tofu
  • 0.75 0.75 Tbsp nutritional yeast (adjust based on how "cheesy" you'd like the creamed spinach to taste)
  • 0.125 0.125 tsp fine sea salt
  • 0.0625 0.0625 tsp garlic powder
  • 0.125 0.125 tsp onion powder
  • 0.25 0.25 lemon (juiced)
  • 112.5 112.5 g frozen, chopped spinach
  • 0.5 0.5 tsp olive oil
  • 0.5 0.5 shallots, very thinly sliced
  • Freshly ground black pepper

Method

  1. Heat the frozen spinach according to package instructions. Press it firmly through a colander to remove as much moisture as you can. Set the spinach aside.
  2. Place the tofu, nutritional yeast, salt, garlic and onion powder, and lemon juice in a blender and blend till smooth.
  3. Heat the oil over medium in a large skillet. Add the shallots and sauté for 5 minutes, stirring often, or until they’re gently browning. Add the spinach and the blended tofu mixture. Heat, stirring as you go, until the ingredients are mixed and warm through. Taste and add extra salt and/or freshly ground pepper to taste. Serve hot.
