Vegan Seitan Saag Recipe

Easy to make, jam-packed full of healing spices and positively bursting with flavour – this seitan saag is perfect for midweek dinners!

All you need for this sumptuous saag is a large pan!

  • 0.25 0.25 tbsp peanut oil
  • 0.25 0.25 large onion, roughly chopped
  • 0.25 0.25 thumb-seized piece of ginger, peeled and finely chopped
  • 0.125 0.125 tsp salt
  • 75 75 g shredded seitan
  • 0.25 0.25 tsp sugar
  • 0.5 0.5 tsp curry powder
  • 0.125 0.125 tsp turmeric
  • 0.125 0.125 tsp cumin
  • 0.25 0.25 dash cinnamon
  • 0.25 0.25 heaped tsp minced chilli
  • 0.25 0.25 tbsp tomato paste
  • 50 50 g diced fresh tomatoes
  • 58.75 58.75 ml water
  • 0.5 0.5 handfuls spinach, roughly chopped

Method

  1. Saute the onion in the peanut oil with the ginger and salt till the onion is translucent, then add the seitan and and fry off until slightly browned.
  2. Add the sugar, spices, chilli, and tomato paste, give a good stir and let everything brown a touch more, then add the tomatoes.
  3. Stir and cook the tomatoes for about 5 minutes, then stir in the water, bring the heat up and cook down until you have half the amount of liquid left in the pan.
  4. Once it’s cooked down reduce the heat and add the spinach cooking through until it has wilted.
  5.  Serve and enjoy!
