Vegan Salted Chocolate Fondant Recipe

To enhance the rich flavours of the chocolate and give this vegan dessert recipe something a little bit special, Gaz has included Himalayan salt in the filling.

But rather than making this plant-based dessert taste salty, the addition of salt makes the chocolate taste even sweeter! Give it a try and see for yourself.

  • Dry ingredients:
  • 28.75 28.75 g plain flour
  • 25 25 g sugar
  • 0.375 0.375 tsp baking powder
  • 0.05 0.05 tsp salt
  • 0.0625 0.0625 tsp cinnamon
  • 0.5 0.5 Tbsp cacao/cocoa powder (heaped)
  • Wet ingredients:
  • 28.75 28.75 ml cashew milk
  • 0.0625 0.0625 tsp apple cider vinegar
  • 0.125 0.125 tsp vanilla extract
  • 0.5 0.5 Tbsp cinnamon apple sauce (egg replacement)
  • 15 15 g vegan margarine
  • For the filling:
  • 25 25 g organic dark vegan chocolate, cut into cubes
  • 0.0625 0.0625 tsp Himalayan salt

Method

  1. Preheat the oven to 180°C/Gas Mark 4 and grease four small pudding tins.
  2. Place all of the wet ingredients in a small saucepan, then place over a low heat and stir until melted and combined.
  3. Add the dry ingredients to a mixing bowl and combine well, then pour in the contents of the saucepan and stir until just combined.
  4. Fill each of the pudding tins halfway up with the mixture, then place 4-5 cubes of chocolate and a sprinkling of salt in the middle. Pour over the rest of the mixture, then give each tin a tap on the surface to level them out.
  5. Place on a baking tray, then into the oven for 12 minutes.
  6. Serve the vegan chocolate fondant fresh from the oven with cherries and a sprinkling of organic cocoa powder.
