This crunchy broccoli slaw with cabbage and red onion is so vibrant and flavoursome thanks to the freshness of the veggies and the tasty blend of herbs. It’s absolutely delicious served as a side salad, in a burger or with a fresh plat of hot potato wedges.

- 2 2 heads of raw broccoli
- 0.5 0.5 small red cabbage
- 1 1 red onion
- 1 1 small punnet cherry tomatoes
- 2 2 Tbsp vegan mayonnaise, to bind
- Chopped fresh herbs – parsley, coriander, chives or spring onions would work best
Method
- Finely peel and slice the broccoli, cabbage and onion
- Add the tomatoes and mix well
- Adding fresh herbs and serve
