Mint Chocolate Irish Cream Cocktail

  • Mint Chocolate Ganache
  • 30 30 g Peppermint Conscious Chocolate
  • 50 50 ml oat, soy, almond or coconut cream
  • Mint Chocolate Irish Cream Cocktail
  • 50 50 ml whiskey
  • 200 200 ml tinned coconut milk
  • 1 1 Tbsp liquid sweetener (date syrup works great!)
  • 0.25 0.25 cup mint chocolate ganache
  • A generous handful of fresh mint leaves

Method

Make the chocolate ganache at least a couple of hours before you want to make your cocktails.

  1. In a bain-marie, melt chocolate on a low heat.
  2. When fully melted, let cool.
  3. Pour in vegan cream
  4. Whisk until completely smooth
  5. In a cocktail shaker or jug, use the end of a rolling pin to muddle mint leaves with the whiskey
  6. Add rest of ingredients, blend to combine fully
  7. Serve in a chilled glass with plenty of ice
