Mint Chocolate Irish Cream Cocktail
The fresh flavour of peppermint perfectly compliments the deliciously rich creaminess of this vegan mint chocolate Irish cream cocktail.
- Mint Chocolate Ganache
- 30 30 g Peppermint Conscious Chocolate
- 50 50 ml oat, soy, almond or coconut cream
- Mint Chocolate Irish Cream Cocktail
- 50 50 ml whiskey
- 200 200 ml tinned coconut milk
- 1 1 Tbsp liquid sweetener (date syrup works great!)
- 0.25 0.25 cup mint chocolate ganache
- A generous handful of fresh mint leaves
Make the chocolate ganache at least a couple of hours before you want to make your cocktails.
- In a bain-marie, melt chocolate on a low heat.
- When fully melted, let cool.
- Pour in vegan cream
- Whisk until completely smooth
- In a cocktail shaker or jug, use the end of a rolling pin to muddle mint leaves with the whiskey
- Add rest of ingredients, blend to combine fully
- Serve in a chilled glass with plenty of ice
