Mexican Veggie Roll Ups

These versatile vegan Mexican veggie roll ups are great as a snack, appetiser or light lunch as they’re quick and easy to make with a tasty fiery kick from the jalapeño peppers.

  • 0.25 0.25 pack Violife Block with Hot Peppers, sliced
  • 1 1 large tortillas
  • 87.5 87.5 g hummus
  • 0.25 0.25 can black beans, drained and rinsed
  • 0.25 0.25 red pepper, finely chopped
  • 0.75 0.75 jalapeño peppers, chopped
  • small can of corn, drained and rinsed
  • 0.125 0.125 red onion, finely chopped
  • handful of fresh coriander, chopped

Method

  1. Add in a bowl black beans, red and jalapeño peppers, corn, onion and coriander and mix thoroughly.

  2. Cut the Violife Block with Hot Peppers in thin slices approx. 1.5cm.

  3. Spread the hummus on the tortillas.

  4. Place the filling on top of the hummus and then place the Violife slices in a row.

  5. Roll the tortillas up tightly from the bottom and gently slice them into bite-sized pieces.
