Vegan Maple-Glazed Tofu Recipe

The sweet and salty combination of maple syrup and soy sauce make this maple-glazed tofu so utterly delicious. The addition of pineapple juice adds a fruity yet sweet flavour and also helps to make the glaze wonderfully sticky.

Tofu is one of the best vegan protein sources because it contains all nine amino acids, making it a complete vegan protein. It also absorbs flavour very well thanks to its porous texture so marinades beautifully. 

The one thing to remember about preparing tofu is that it has a high water content, and if that excess water is removed, your tofu benefits by being crispier. We’ve pressed the tofu between kitchen towels, but you can also use a tofu press or two plates, being careful not to break the tofu. 

This maple-glazed tofu is delicious served with a crispy salad for a light vegan lunch, or with rice and steamed veggies for a healthy vegan dinner.

  • 100 100 grams firm tofu
  • 0.25 0.25 Tbsp olive oil
  • 31.25 31.25 ml pineapple juice
  • 31.25 31.25 ml maple syrup
  • 0.25 0.25 Tbsp soy sauce

Method

  1. Drain the tofu and press with kitchen paper to remove excess water. Cut into eight slices, approximately 1 cm/½ inch thick.
  2. Heat the oil in a large, heavy-based frying pan over a medium heat. Fry the tofu on both sides for 5–8 minutes, turning gently, or until golden.
  3. Meanwhile, put the pineapple juice, maple syrup, soy sauce and mustard in a bowl and stir thoroughly to combine. Pour the mixture over the tofu in the pan and reduce the heat to a simmer. Cook for 20 minutes, turning the tofu once.
  4. Serve the tofu slices warm or cold, on a bed of mixed salad leaves.
