Maple Glazed Brussels Sprouts with Sweet Potato Mash

  • 150 150 g Brussels sprouts
  • 25 25 g cashew nuts
  • 2.5 2.5 red bird's eye chilies
  • 0.5 0.5 large sweet potato
  • Salt and pepper, to taste
  • 25 25 ml maple syrup
  • 25 25 ml American-style mustard
  • 25 25 ml soy sauce
  • 25 25 ml vegetable oil

Method

  1. Peel the sweet potato and cut into small pieces – boil them for about 20 minutes, rinse and mash.
  2. Season the mash with salt and black pepper – set aside.
  3. In a hot pan start by frying the halved brussel sprouts in vegetable oil.
  4. Season well with salt and black pepper.
  5. After 3 minutes you can add the hot peppers and the cashew nuts and cook for another 5 minutes.
  6. Now you can add the maple syrup, mustard and soy sauce and cook for 2 more minutes.
  7. Serve on top the sweet potato mash
