Vegan Go Go Granola Recipe

To make a great heap of vegan granola all you need is a large mixing bowl, two baking trays, baking paper, and a Kilner jar for storage!

  • 0.14285714285714 0.14285714285714 tbsp vegetable or melted coconut oil
  • 8.9285714285714 8.9285714285714 ml maple syrup
  • 0.071428571428571 0.071428571428571 tsp vanilla bean paste
  • 21.428571428571 21.428571428571 g steel-cut or rolled oats
  • 1.7857142857143 1.7857142857143 g jumbo raisins (can substitute apricots or dried cranberries)
  • 3.5714285714286 3.5714285714286 g toasted. peanuts
  • 3.5714285714286 3.5714285714286 g pumpkin seeds
  • 3.5714285714286 3.5714285714286 g desiccated coconut
  • 3.5714285714286 3.5714285714286 g flaked or whole almonds

Method

  1. Preheat the oven to 150°C/130°C fan/ gas mark 2.
  2. In a large bowl mix together the oil, maple syrup and vanilla. To this, add the oats and seeds and combine thoroughly.
  3. Spread the granola in a thin layer over two baking sheets and bake for 15 mins.
  4. Remove from the oven and stir through the dried fruits and coconut, then return to the oven for a further 10 mins. Don’t be tempted to wait for it to darken in colour or go too crispy, this is a lovely chewy soft bite granola that keeps a lovely texture.
  5. Remove from the oven and tip onto a large sheet of baking paper or another tray to cool. Once cooled you can store this in a clean Kilner jar for up to a month, although it’s unlikely to last more than a day or two as it is really moreish with creamy nut mylk, coconut yoghurt and even on its own!

TIP:

  • Wipe your tablespoon with oil to help with measuring the maple syrup – it will glide straight off.
  • Play with flavours, let the children choose their favourites to add in the same quantities, there are lots of dried fruits to choose from!
