Easy Vegan Peanut Butter Cups Recipe

This easy vegan peanut butter cups recipe couldn’t be simple to make and uses just four ingredients you probably already have at home.

These are perhaps the simplest vegan sweet treats you can make and are heavenly to eat.

There’s no shame in keeping things simple, especially if it works and these do. We really mean it when we say that these vegan peanut butter cups could not be any easier to make. 

First, the peanut butter and vegan margarine are heated in the microwave. Then you add the icing sugar and stir before melting the remaining margarine and chocolate together to form the outer shell.

Then, simply pop a spoonful of the chocolate mixture into a paper cup, top it with the peanut butter and cover with chocolate to coat.

In just a few steps, you’ve made a vegan sweet treat that you can pop in lunch boxes or bring out for the kids when you want a double hit of vegan chocolate and vegan protein.

These vegan peanut butter cups are so easy to make that your family can remain well stocked and never have to go without.

Once the easy peanut butter cups are firm, pop them in an airtight container and keep them in the fridge.

  • 20 20 grams smooth peanut butter
  • 0.66666666666667 0.66666666666667 Tbsp vegan margarine
  • 8.3333333333333 8.3333333333333 grams vegan icing sugar
  • 116.66666666667 116.66666666667 grams vegan dark chocolate, broken into pieces

Method

  1. Line a mini muffin tray with 30 mini paper cases.
  2. Place the peanut butter and 1 tablespoon of the margarine in a small non-metallic bowl. Microwave for 30 seconds to 1 minute, or until softened but not melted. Mix the icing sugar in thoroughly.
  3. Place the chocolate and the remaining margarine in a large heatproof bowl set over a pan of simmering water. Stir until completely melted.
  4. Put a teaspoonful of melted chocolate into each paper cup, top with half a teaspoon of the peanut butter filling and cover the filling with more melted chocolate. Take care not to overfill the cases. Chill in the refrigerator for 1 hour, or until firm.
