Crunchy Vegan Breakfast Bar Recipe

These crunchy vegan breakfast bars are ideal for a grab-and-go breakfast as they’re perfectly scoffable for the train, but they are also great for athletes who need a refuel during a long training session.  Loaded with healthy nuts, dates and coconut oil for energy, with no added sugar at all, they are the real deal! 

All you need to make your own batch is a food processor and a baking tin or a silicon tray!

  • 0.083333333333333 0.083333333333333 cup pitted organic dates
  • 10.416666666667 10.416666666667 ml hot water
  • 16.666666666667 16.666666666667 g mixed raw nuts
  • 10.416666666667 10.416666666667 g sunflower seeds
  • 10.416666666667 10.416666666667 g pumpkin seeds
  • 10.416666666667 10.416666666667 g desiccated coconut
  • 0.25 0.25 tsp psyllium husk
  • 0.083333333333333 0.083333333333333 Tbsp vanilla extract
  • 0.25 0.25 Tbsp cacao
  • 0.33333333333333 0.33333333333333 Tbsp coconut oil
  • For the topping
  • 8.3333333333333 8.3333333333333 g whole hazelnuts
  • 1/2 a slab 85% good quality vegan chocolate

Method

Method
  1. Soak the dates in the hot water for 10min.
  2. Preheat the oven to 170ºC.
  3. In a food processor, add all of the ingredients including the date water (excluding the hazelnuts and choc topping)
  4. Blitz for 1 min, scrape down the side and blitz again for 1 min.
  5. Press the batter into a lined 10×8 inch baking tin or even better a silicon tray
  6. Press the whole hazelnuts into the batter.
  7. Bake for 40min.
  8. Remove from the oven and immediately turn off the oven.
  9. Carefully flip out the bake upside down onto an oven rack and slice into bars.
  10. Separate the bars slightly giving them a little space between each other.
  11. Return the bars back to the oven for a further 10min to cook the underside.
  12. Remove then leave to cool and crisp.
  13. Melt the dark chocolate and drizzle over the cooled bars, leave to set.
