Creamy Vegan Mushroom Soup With Truffle Oil

If you're a mushroom fan then creamy mushroom soup is one of the tastiest ways to enjoy them in all their glory. Truffle oil adds an extra layer of flavour that makes this dish an impressive starter.

Whilst traditionally truffles are harvested by animals, most truffle oils in shops today don't contain any real truffle, but be sure to double-check before buying.

  • 0.16666666666667 0.16666666666667 onion, roughly chopped
  • 0.33333333333333 0.33333333333333 Tbsp olive oil
  • 100 100 g mixed fresh wild mushrooms, chopped up
  • 0.5 0.5 cloves garlic, sliced
  • big pinch of salt
  • 41.666666666667 41.666666666667 ml coconut milk
  • 41.666666666667 41.666666666667 ml vegetable stock
  • 0.33333333333333 0.33333333333333 Tbsp fresh thyme, leaves picked
  • sea salt
  • freshly ground black pepper
  • 0.083333333333333 0.083333333333333 lemon, juiced
  • Toppings;
  • Drizzle of truffle oil (many are vegan-friendly but be sure to check)
  • coconut yogurt
  • 0.33333333333333 0.33333333333333 slices toasted sourdough
  • reserved mushrooms
  • thyme
  • toasted walnuts

Method

  1. In a large pan, fry the onion on a medium heat with the olive oil until soft and caramelising.
  2. Add the garlic and mushrooms and fry until the mushrooms have softened.
  3. Now add a big pinch of salt. Scoop out 2 -3 tbsp cooked mushrooms – set aside
  4. Add in the coconut milk & stock. Simmer for 10 minutes.
  5. Using a stick blender or food processor blitz until creamy.

To serve; 

  1. Toast the bread.
  2. Spoon the soup into bowls
  3. Drizzle with truffle oil and a swirl of coconut yoghurt.
  4. Top with the bread, reserved mushrooms, thyme and toasted walnuts.
