Blackberry & Coffee Ice Cream

Make the most of the last of this season’s blackberries with this refreshing, fruity blackberry and coffee ice cream! 

To make your own batch of smooth tasty ice cream, all you need in a food processor and a serving dish suitable for freezing!

  • 600 600 g frozen blackberries
  • 1 1 tin organic coconut milk
  • 2 2 Tbsp high standard maple syrup
  • 2 2 tsp coffee grinds
  • 1 1 Tbsp pure coffee extract

Method
  1. In a food processor using the S blade, add the blackberries and coconut and pulse until the blackberries are broken up and smooth.
  2. Add the remaining ingredients and run the processor until the mixture is smooth.
  3. Taste and tweak the flavours to preference (you may want to add more maple syrup or coffee)
  4. Transfer into a serving dish and leave in the freezer for about 30min until firm and scoopable.
Notes
  • If left in the freezer for a longer period, it will be needed to be taken out earlier than serving to soften.
