  • Cooking pot
  • Kitchen knife
  • For the broth:
  • 50 50 g dried porcini mushrooms
  • 0.25 0.25 thumb ginger
  • 0.25 0.25 galangal root
  • 0.5 0.5 sticks lemongrass
  • 0.5 0.5 red chillies
  • 12.5 12.5 g raw cane sugar
  • Star Anise
  • 0.25 0.25 bulb garlic
  • 0.5 0.5 lime (juice)
  • 0.375 0.375 litres boiling water
  • 0.25 0.25 bottle Chilli No. 5’s Totally Thai vegan hot sauce
  • For the bulk:
  • 100 100 g rice noodles (Pre-soaked)
  • 0.25 0.25 head broccoli
  • 2 2 baby corn
  • 25 25 g mangetout
  • 25 25 g cashews
  • Sesame seeds
  • Rehydrated porcini mushrooms
  • Pinch of bean sprouts
  • 25 25 g mushrooms
  • To finish:
  • Coriander
  • Red chillies
  • Sesame seeds
  • Totally Thai Chilli No. 5 vegan hot sauce

Method

  1.  Add all of the broth ingredients to the water in a large pan, holding back half of the porcini mushrooms. Simmer on a low heat for 90 mins
  2. Pre-soak the rest of the porcini mushrooms to rehydrate in a little cold water, and do the same with the rice noodles in a separate bowl
  3. When the broth is ready, strain off and keep hot.
  4. Stir fry the cashews, Broccoli, corn, mange tout, fresh mushrooms and the rehydrated mushrooms.
  5. Add the pre-soaked noodles to a bowl and load up with the stir fry mix
  6. Pour over the broth and finish the bowl with a pinch of bean sprouts, coriander, chilli slices and lashings of Totally Thai Chilli No. 5 hot sauce.
