The recipes are also easy to follow, so you don’t slavishly have to refer back to the text every few minutes and, once done, should stay in your head for next time or just a quick glance will refresh your memory.
To give you a flavour of what you can find in the book, we are featuring just one of those dishes – a warming vegetable dish, perfect for these gloomy days, with just two ingredients and 5 minutes cooking time. It can be served as a side or a main when accompanied by your choice of fitters and salad – all of which are featured in the cookbook. Puerros al sesame (Leeks in tahini)
Two ingredients and the most sensational taste… Choose stiff, crisp leeks, ideally with the roots still on.
- 4 fresh leeks
- 4 tbsp toasted sesame paste aka tahini – toasted is the darker version and has a stronger, nuttier taste
- Put a pan of water on to boil.
- Cut the leeks lengthways in four, stopping just short of the roots.
- Now it is easy to wash them under the tap to remove any grit without them falling apart.
- Throw them in the boiling water for just 5 minutes. Remove, drain and put them in your serving dish.
- Stir in the tahini and then serve.
