Now parked at its permanent spot in Hackney, street food bus Just FaB continues to bring Italian, plant-based dishes to London.
At the Hackney location, customers can dine in the outdoor seating area, sit on the top level of the bus itself or grab a takeaway if they’re pushed for time.
Back in 2014, founder Fabio Pironti converted the bus as a means of bringing his mother’s vegan Sicilian recipes to the masses. Myrna Panascia (his mother), who has been vegan for 20 years and developed each one of the recipes, has compiled a vibrant menu of pizzas, pastas, burgers, cheeses, fritters and desserts.
Any speciality ingredients needed – like Sicilian chili oil, for example – are sourced from family-owned farms in Sicily. As for the rest of the ingredients, they are gathered from local farms in an attempt to reduce the carbon footprint of the company.
Speaking to LiveKindly, Pironti said: “Where possible our ingredients are organic and we have a zero-mileage policy, sourcing as many ingredients locally as we can.”
