A new vegan kitchen in Edinburgh offering a range of plant-based dishes is set to offer cookery classes.

Pulse PlantBased HomeCooking, which is located under St Johns on Lothian Road, uses a range of seasonal and local ingredients in its dishes.

According to the eatery’s founders Ayshé and Mark, they aim to make healthy vegan food, which uses as little oil as possible without the flavour of the food being impacted.

Options on the menu, which changes depending on the availability of ingredients, include vegan lasagne, ratatouille, dhal, sushi, green coconut curry, kimbap, ful medames, hummus, and focaccia.

In addition, they aim to waste as little food as possible, making their operation more eco-friendly.

The couple is planning to offer cooking classes, teaching a range of skills, including how to improvise with leftover ingredients, and cooking methods.

The founders of the eatery, Ayshé and Mark, have been plant-based for almost a decade, according to their website.

It says: “We have been plantbased since the start of 2013. We take the phrase ‘good taste above all’ seriously.

“We founded PULSE at the very end of 2014 and served our first paying customer at the beginning of 2015 at Hampstead Community Centre in North London.”

They continue: “Keeping calm and carrying on hasn’t proven to be an efficient strategy, we think we might try jumping up and down, cooking up a storm as a strategy to bring about change one bite at a time.

“That’s why we founded PULSE, a plantbased homecooking business in London in 2014. PULSE is the manifestation of our engagement with food politics.

“We moved to beautiful Edinburgh at the end of 2021 and have found a permanent home for PULSE at St John’s Church. We have learned a lot over the years and we cannot wait to share our food and  food knowledge with you.”

Pulse PlantBased HomeCooking is open on Weds/Thurs from 11am-5pm, on Fri/Sat from 11am-8pm, and on Sunday from 11am-5pm.
