After a year of passionate preparation, a new vegan restaurant called brEAThe will open on the rue Henry Monnier in September.
BrEAThe restaurant was created by three vegan friends, all catering professionals. Together they chose the site for their restaurant – a former 19th century teahouse, complete with classic mouldings, mirrors and genuine cement floor tiles. The tasteful architecture and decoration of the building allows brEAThe to mix its traditional Parisian bistro style with its not-so-traditional vegan menu!
Homemade seitan burgers with gooey vegan cheese, and French fries in a bourbon and BBQ mayonnaise are among the food options that will be on offer. As well as this, diners will be able to choose from aquafaba-mounted foamy cocktails or sharply selected wines.
The aim of brEAThe is to let diners relax in a cosy, homely place, free from the meat-eating traditions of generations past. The creators want their customers to think about the planet and all the creatures on it, enjoying good food without causing any harm.
BrEAThe plans to open on the 10th September 2018. For further updates, follow them on Instagram (@breathe.restaurant) or find them at www.breathe-restaurant.com.
