Mindful Bites launches a range of vegan panettone

Gourmet plant-based food brand Mindful Bites has introduced a range of vegan panettone to its range of seasonal cakes and bakes.

The range is dubbed the Veganettone, a term coined by Mindful Bites founder Stephanie Peritore, in a bid to avoid clashes with Italian regulations protecting the original panettone recipe containing both butter and eggs.

Made in a dedicated vegan bakery using only sustainably-sourced, natural ingredients, the panettone is available in three delicious flavours including the Classic with raisins and candied orange peels and Chocolate and Mixed Berries.

All flavours are available in the traditional family format (500g), the miniature version (100g), as well as a Gift Box containing all three variants which are perfect for Christmas gifts.

Speaking about the process of creating an authentic panettone with a “deceptively light texture, silky crumb and signature rich flavour”, Peritore told Vegan Food & Living: “We follow just the very same Italian artisanal traditions, passed down from 3 generations.

“Patiently, we air our secular sourdough starter 3 times a day, every day of the year, and we let the dough rise 4 times over 72 hours. Clearly we did change the original recipe and filled our Veganettone with our love for a better planet.”

The Veganettone is available to purchase from TheVeganKind Supermarket, Whole Foods Market, Selfridges, Fenwick and Ocado.
