THIS and bakery chain Coughlans Bakery launch vegan bacon Wellington

THIS has teamed up with Coughlans Bakery to create a festive vegan bacon and beef wellington.

Pioneering plant-based brand THIS has collaborated with Coughlans Bakery to create this Christmas’ most exciting centrepiece yet: a vegan bacon wellington.

The wellington features Coughlans’ homemade mushroom-based beef wrapped in THIS Isn’t bacon rashers and is encased in herby vegan puff pastry. Is anyone else’s mouth watering yet?

The meaty footlong bacon wellington serves six (if you’re into sharing) and is available from all 26 Coughlans bakeries now. You can also order the magnificent wellington for delivery in South London and Surrey from November 29th.

This is the first vegan wellington of it’s kind and is sure to be a hit this festive period.

‘Can’t tell the difference’

Sean Coughlan, Founder of Coughlans Bakery told Vegan Food and Living: “I’ve made it my mission to come up with great tasting vegan food by using our traditional skills, so nearly all of our customers can’t tell the difference between the meat and meat-free versions of our pastries.  

“After months of test recipes, our vegan beef in the Wellington takes three days to make and the addition of THIS Isn’t Bacon gives it that extra dimension to make the perfect pairing. We add a few more important secret ingredients that pack the Wellington with that meaty flavour.”

Vegan Coughlans

While Coughlans Bakery isn’t vegan itself, they have launched numerous vegan baked goods over the past few years. One particularly tempting new product is their vegan cheese and bacon turnover, again using THIS isn’t bacon. They also offer treats such as a vegan steak and mushroom bake, vegan cheese and onion pasty, and a classic vegan sausage roll.

Coughlans is also vegan comedian Romesh Ranganathan’s favourite bakery. Last year Coughlans baked him “the best birthday cake of all time”. The family bakery is certainly making waves with its vegan products, and we can’t wait to see what they come up with next!

The THIS Isn’t Bacon Wellington costs £12, serves six people and is available now from all 26 bakeries.
It is also ready for delivery on Deliveroo, Uber Eats and Just Eat from the 29th November.
