Fried chicken brand to open vegan fast food restaurant following success of its vegan menu

London-based fried chicken brand Coqfighter is opening a brand new vegan burger concept in Shoreditch in London this weekend.

The plant-based eatery will be serving up a mouth-watering menu packed full of belly-busting burgers, milkshakes and sides.

Ahead of its grand opening at Boxpark Shoreditch on Saturday (4th July), Mercy Burger will be whetting our appetites by revealing a new menu item every day on its Instagram account.

Plant-based menu proves popular

Speaking to BigHospitality, Coqfighter co-founder Deacon Rose said that the new vegan venture was inspired by the popularity of Coqfighter’s vegan menu which was introduced in 2019.

Rose decided to open a dedicated vegan venue saying “its popularity has gone beyond our wildest dreams”.

“This isn’t vegan food just for vegans, it’s vegan food for everyone. We set out to prove that fast food staples can taste just as good and be just as indulgent when they are plant-based,” he added.

“Whether someone is vegan, looking to reduce their meat consumption, or just curious, we want Mercy Burger to be their guilt-free burger restaurant of choice.”

Announcing the opening of the new eatery in an Instagram post, the company said: “Having been overwhelmed by the response to our vegan menu range, rather than add more we thought, why not develop this further and launch something new.⠀

“Presenting MERCY BURGER. Smashed patty cheeseburgers, fried chickn sandwiches, sides and milkshakes all 100% vegan.”

Coqfighter will open plant-based outlet Mercy Burger on July 4 in Boxpark, Shoreditch.
