The UK's largest Mexican restaurant chain, Chiquito has launched a fresh new vegan menu in celebration of Veganuary.
Chiquito hopes to show its customers just how delicious vegan food really is this Veganuary as it aims to “make vegan appealing for all guests” with its new vegan menu.
Following a great response to its 2019 Veganuary menu, Chiquito has taken “all the fun and fresh ingredients of Mexico” and put their own plant-based spin on classic dishes.
To kick off your plant-based feast, the new menu includes the impressive-sounding Loaded Vegan Wedges. These fulled-loaded crispy baked sweet potato wedges are pilled high with vegan chorizo, sweetcorn and vegan cheddar melt.
There is a lip-smacking array of marvellous new mains on Chiquito’s new vegan menu such as a Vegan Paella which swaps seafood for
Pibil jackfruit, along with vegan chorizo, sweetcorn with rice, black beans and tomatoes in a hot ancho sauce.
Banana blossom is one of the hottest new ingredients in Western vegan cooking, and the restaurant chain is using it in its new Vegan Telera Bun (pictured above) – a Banana blossom burger with vegan chorizo and sweetcorn mix and a vegan cheddar sauce.
Love getting stuck in with your fingers? Try the new Vegan Corn Ribs! The roasted ‘Rib style’ corn is smothered in finger-licking fiery chipotle sauce with slaw and vegan creme fraiche for dipping.
Chiquito's new Vegan Corn Ribs are smothered in chipotle sauce and served with naked slaw, Oatly fraiche and sweet potato fries.
With all those tasty mains to try, you might find it hard to leave room for dessert… until you hear just how delicious they sound!
The new Vegan Mexican Mess features a tempting medly of creamy vanilla vegan torte on a crumbly biscuit base served in a crisp tortilla basket, topped with vegan ice cream, chocolate sauce and frozen raspberries.
But perhaps most exciting of all is Chiquito’s impressive culinary creation that seeminly defies the laws of physics – Vegan Deep Fried Ice Cream!
The deep-fried balls of red berry-flavoured plant-based ice cream are served up in an edible tortilla basket and come drizzled in chocolate sauce and tangy frozen raspberries.
Red berry ice cream is deep fried and served in a crisp tortilla basket, finished with chocolate sauce and frozen raspberries in the new Vegan Deep Fried Ice Cream dish.
Mexican food is packed with fresh, natural ingredients, and according to Chiquito “it lends itself naturally to those looking to incorporate less meat in their diet.”
In a release sent to Vegan Food & Living, the company said: “We had a great response to our first vegan menu in 2019 and wanted to continue bringing the best of Mexican food to the UK dining scene, so Veganuary was the perfect opportunity to take all the fun and fresh ingredients of Mexico and rework them using plant-based ingredients.”
Chiquito’s new vegan menu is available to order now on Click and Collect, or via UberEats, Deliveroo and JustEat at selected sites.
What’s more, the company is also offering 30% off all Click & Collect mains in January.
