From today, new braised tofu options will appear on the menu of all six London-based Chipotle restaurants. Available in burritos, tacos, burrito bowls and salads, this new option is set to appeal to vegans and non-vegans alike.
The slow-cooked tofu, called ‘sofritas’, is accompanied by onions, garlic, cumin and paprika, simmered in chopped tomatoes and sprinkled with oregano. It can be customised to suit individual tastes, dietary requirements or training regimes. Other ingredients that can be added to the mix are coriander-lime rice, salsa, guacamole and pinto beans.
A new set meal item, called The Vegan Boost, features the braised tofu. It is a gluten-free salad with fresh tomato salsa, romaine lettuce, tofu and black beans. It contains a mere 305 calories.
Operations Director Jacob Sumner said: ‘Braised tofu is a very different menu item, not just for Chipotle, but for any fast food or fast casual restaurant. It was really conceived with vegetarians and vegans in mind, but it’s so delicious that we believe it will have a broad appeal on taste alone. We are proud to be able to serve those looking to avoid meat, or lower their meat intake, with a substantial protein alternative.’
The braised tofu will be available in Chipotle’s London restaurants from today, priced from £7.
