What is chocolate made from?
Chocolate is made from cocoa beans which have been removed from inside cocoa pods.
These beans are then fermented, dried, roasted, shelled, chopped and pressed. The shell of the cocoa bean is removed to produce cacao nibs. Next, the nibs are then ground to produce cocoa mass.
When placed under extremely high pressure, cocoa mass separates into cocoa powder (which gives a chocolate flavour and colour) and cocoa butter (the melting property of chocolate).
Pure chocolate is then created by combining cocoa solids and cocoa butter via processes called conching, tempering, and finally moulding.

Dark chocolate is often vegan. Dark chocolate contains 50-90% cocoa solids, with just cocoa butter, and sugar.
Additionally, dark chocolate is a rich source of antioxidants and minerals. Some studies suggest dark chocolate can lower the risk of heart disease and improve brain function.
There are dark chocolate bars in the supermarket that are suitable for vegans, but always make sure to check the ingredients as milk powder is commonly added.
Is milk chocolate vegan?
Dairy-free milk chocolate is created using a lower level of cocoa solids, cocoa butter, sugar, and plant-based milk.
Oat or soy milk continues to be the main ingredients most producers are using to create a creamy chocolate taste, but there are some brands opting for nut-based milk to enhance the flavour.
Last year, Cadbury Plant Bar hit the supermarket shelves releasing its dairy-free milk chocolate bar made from almonds as an alternative to its classic Dairy Milk bar.
Is white chocolate vegan?
Although white chocolate has a different production method from dark chocolate, it can be made vegan.
Instead of using cocoa solids, dairy-free white chocolate is made from cocoa butter, sugar, and a plant-based milk product.
Manufacturers sometimes struggle to recreate the taste of traditional white chocolate due to the removal of cocoa solids. Cocoa butter is an incredibly rich and waxy ingredient so balancing the flavours is crucial.
Thankfully, there is a range of dairy-free white chocolate available in the supermarket and online. Most recently, Galaxy Smooth White vegan chocolate launched at Asda, which was praised for its creamy and smooth flavour.
